- Prepare dough starter as needed.
- Mix 1 cup flour, sugar, salt, and yeast in a large bowl.
- Combine milk and margarine in a saucepan.
- Heat over low heat until very warm (120° to 130°F).
- Add warm milk mixture to dry ingredients and beat for 2 minutes on medium speed.
- Stir in 1 1/2 cups of dough starter and 1/4 cup flour.
- Beat on high speed for 2 minutes.
- Add additional flour gradually to make a soft dough.
- Turn out onto a lightly floured board and knead until smooth and elastic, about 8 to 10 minutes.
- Place dough in a greased bowl, grease the top, and cover.
- Let rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and turn onto a floured surface.
- Divide the dough in half.
- Cover the halves and let rest for 15 minutes.
- Place loaves on greased baking sheets sprinkled with cornmeal.
- Cover and let rise until doubled in size, about 1 hour.
- Mix egg white and water to create an egg wash.
- Brush the egg wash over the loaves.
- Sprinkle caraway seed on top of the loaves.
- Bake in a preheated oven at 375°F (190°C) for 40 to 45 minutes.
- Cool on racks before slicing.
