Ingredients

  • 3/4 cup sugar
  • 1 tablespoon grated orange rind
  • 2 cans refrigerated biscuits
  • 1/4 cup melted butter or margarine
  • 1 ounce cream cheese
  • 3/4 cup sifted confectioners' sugar
  • 1 tablespoon orange juice
  • 1/4 teaspoon vanilla
  • 1/4 cup flaked coconut

Instructions

  1. Heat oven to 425°F (220°C).
  2. Combine sugar and grated orange rind in a small bowl.
  3. Remove biscuits from cans and dip each biscuit in melted butter, then in the sugar mixture.
  4. Arrange the coated biscuits in an overlapping circle in a greased 9-inch round cake pan.
  5. Bake for 15 to 20 minutes until golden brown.
  6. While the coffee ring is still warm, prepare the frosting by creaming together cream cheese, orange juice, confectioners' sugar, and vanilla.
  7. Spread the frosting over the warm coffee ring.
  8. Sprinkle with flaked coconut and serve while warm.
