Ingredients

  • 2 Tbsp. cumin seed
  • Grated zest of 2 oranges
  • 3 cloves garlic
  • 1 Tbsp. dried thyme
  • 1 Tbsp. cracked black pepper
  • 1 Tbsp. chili powder
  • 1 Tbsp. brown sugar
  • 1 Tbsp. salt
  • 4 to 6 lb. whole beef tenderloin
  • 2 Tbsp. oil

Instructions

  1. Preheat oven to 450°F.
  2. Combine grated orange zest, cumin seed, minced garlic, dried thyme, cracked black pepper, chili powder, brown sugar, and salt to make the spice rub.
  3. Brush the beef tenderloin with oil.
  4. Rub the spice mixture all over the meat.
  5. Place the meat in a roasting pan.
  6. Roast until the meat is done, about 45 minutes for medium-rare.
  7. Let the beef stand for 15 minutes before slicing.
