Ingredients

  • 2 cups chopped fresh broccoli
  • 1 pound ground beef
  • 1 (4 oz) can mushroom stems and pieces, drained
  • 2 cups shredded Cheddar cheese
  • 1/3 cup chopped onion
  • 2 cups Bisquick
  • 1/2 cup cold water
  • 4 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 13 x 9-inch rectangular baking dish.
  3. Bring 1 inch of salted water to a boil in a pot.
  4. Add chopped broccoli, cover, and cook until almost tender, about 5 minutes.
  5. Drain the broccoli thoroughly.
  6. Cook ground beef in a 10-inch skillet over medium heat until browned; drain excess fat.
  7. Stir in drained mushrooms, 1 1/2 cups Cheddar cheese, and chopped onion into the beef.
  8. In a mixing bowl, combine Bisquick, cold water, eggs, Parmesan cheese, salt, and milk to make the batter.
  9. Spread the cooked beef mixture evenly in the prepared baking dish.
  10. Pour the batter over the beef mixture.
  11. Sprinkle remaining 6 1/2 cups Cheddar cheese over the top.
  12. Bake in the preheated oven until golden and set, about 20-25 minutes.
