Ingredients

  • 1 egg, beaten
  • 1 cup orange juice
  • 1 cup raisins, cut fine
  • 1 tablespoon grated orange rind
  • 2 tablespoons shortening, melted and cooled
  • 1 teaspoon vanilla
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup chopped pecans

Instructions

  1. Combine the beaten egg, orange juice, finely chopped raisins, grated orange rind, melted and cooled shortening, and vanilla in a mixing bowl.
  2. Sift together the all-purpose flour, baking powder, baking soda, salt, and sugar; then add to the orange mixture and mix well.
  3. Stir in the chopped pecans.
  4. Pour the batter into a well-greased 5 x 9 x 2 1/2-inch loaf pan.
  5. Bake at 325 to 350°F for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
