Ingredients

  • 1 2/3 cups flour
  • 1/2 cup wheat germ
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 3/4 cup raisins
  • 1 cup skim milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons grated orange peel
  • 1/2 cup powdered sugar

Instructions

  1. Heat oven to 400°F.
  2. Spray 12 medium muffin cups or line with paper cups.
  3. Combine flour, wheat germ, sugar, baking powder, and raisins; mix well.
  4. Add skim milk, vegetable oil, beaten egg, and grated orange peel; mix until dry ingredients are moistened.
  5. Fill muffin cups 2/3 full.
  6. Bake for 18 to 20 minutes or until light golden brown and a wooden toothpick inserted into the center comes out clean.
  7. Remove muffins to a wire rack and allow to cool slightly.
  8. In a small bowl, combine powdered sugar and orange juice.
  9. Drizzle over slightly cooled muffins before serving.
