Ingredients

  • 1 Tbsp. oil
  • 1/2 lb. boneless chicken breasts, cut into thin strips
  • 1 1/2 c. frozen mixed vegetables, thawed
  • 2 envelopes instant cream of chicken flavor soup mix
  • 1 c. water
  • 2 tsp. soy sauce
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground ginger
  • dash crushed red pepper
  • 2 c. hot cooked rice

Instructions

  1. In a medium skillet, heat oil and cook chicken until almost done.
  2. Remove the chicken from the skillet.
  3. Add vegetables to the skillet.
  4. Mix the soup mix with water, then add to the skillet along with soy sauce, garlic powder, and ginger.
  5. Bring to a boil, then simmer, stirring occasionally, for five minutes or until sauce thickens.
  6. Add the cooked chicken and crushed red pepper to the skillet.
  7. Serve the mixture over hot cooked rice.
