Ingredients

  • 1 1/2 c. uncooked long grain rice
  • 1 lb. hot Italian sausage
  • 2 medium green peppers
  • 1 clove garlic
  • 1 small navel orange
  • 1 1/2 lb. tomatoes
  • 1 tsp. leaf oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. chicken broth
  • 4 cooked chicken breast halves
  • 1 Tbsp. chopped parsley

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. In a large skillet, cook the Italian sausage over medium heat until browned. Remove and set aside.
  3. In the same skillet, add green pepper strips and minced garlic; sauté until peppers are tender.
  4. Add peeled and chopped tomatoes, chopped navel orange, chopped parsley, oregano, salt, and pepper to the skillet. Cook for 10 minutes.
  5. Combine cooked rice, sausage, and tomato mixture in a large casserole dish.
  6. Pour chicken broth over the mixture and stir gently to combine.
  7. Place the cooked chicken breast halves on top of the casserole.
  8. Cover and bake at 375°F (190°C) for 45 minutes until heated through and flavors meld.
