Oven Beef Soup

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 1/2 lb. beef stew, cubed
  • 1 can condensed beef/mushroom soup
  • 1 can condensed golden mushroom soup
  • 1 c. water
  • 1/2 tsp. crushed thyme
  • 1/2 tsp. pepper
  • 1 bay leaf
  • 3 c. cubed potatoes
  • 1 c. carrot chunks
  • 1 c. celery

Instructions

  1. In a 5-quart Dutch oven, over medium-high heat, cook half of the beef in hot oil until browned, stirring often.
  2. Remove the cooked beef and set aside. Repeat with the remaining beef.
  3. Spoon off excess fat from the Dutch oven.
  4. Return all beef to the Dutch oven.
  5. Add the condensed beef/mushroom soup, condensed golden mushroom soup, and water to the Dutch oven.
  6. Stir in crushed thyme, pepper, and add the bay leaf.
  7. Add cubed potatoes, carrot chunks, and celery to the soup.
  8. Bring to a boil, then cover and bake in an oven at 350°F (175°C) for about 1.5 to 2 hours, or until vegetables and beef are tender.
