Ingredients

  • 2 lb. fresh oxtails
  • 2 medium carrots
  • 1 medium onion
  • 1 clove garlic
  • 2 medium potatoes
  • 1/2 cup bell pepper
  • 1 cup green beans
  • 1/2 cup celery
  • 1 large fresh tomato
  • 1 can clear beef broth

Instructions

  1. Place oxtails in a roasting pan and bake at 375°F for about 1 hour. Drain off excess fat.
  2. Cut vegetables into your preferred size.
  3. Add the vegetables to the pan with the oxtails.
  4. Pour in the beef broth and season to taste.
  5. Add 1 tablespoon of cooking wine.
  6. Cover the pan tightly with foil.
  7. Return to the oven and cook until the oxtails are well done.
  8. Add a small amount of water if needed during cooking.
  9. Serve the stew as is or with rice.
