Ingredients

  • 8 chicken breast halves
  • 1 tsp. salt
  • 2 (10 oz.) pkg. frozen broccoli spears
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/3 cup grated Parmesan cheese
  • 2 Tbsp. dry sherry
  • 1 tsp. paprika
  • 1 tsp. prepared mustard
  • 1/4 tsp. curry powder
  • 1/2 cup mayonnaise

Instructions

  1. Cook chicken breasts with salt until tender, about 1 hour. Let cool.
  2. Remove skin, debone, and coarsely chop the chicken.
  3. Cook broccoli according to package directions; drain well.
  4. Place cooked broccoli in a lightly greased 13 x 9 x 2-inch baking dish.
  5. Combine undiluted cream of chicken soup, sour cream, sherry, paprika, mustard, curry powder, and mayonnaise to make the sauce.
  6. Pour half of the sauce over the broccoli in the dish.
  7. Arrange the chopped chicken over the sauce.
  8. Top with the remaining sauce.
  9. Cover and refrigerate overnight.
  10. Before baking, let stand at room temperature for 30 minutes.
  11. Bake at 350°F for 25 minutes.
  12. Sprinkle with cheese and paprika, then bake an additional 15 minutes.
