Ingredients

  • 2 pkg. oxtail (about 10 lb.)
  • 1 c. raw peanuts
  • 1 large ginger root (about 3 fingers), peeled and sliced
  • 3 bay leaves
  • 4 beef bouillon cubes
  • 2 dried chili peppers, crushed
  • 1/2 tsp. allspice
  • 1 Tbsp. Worcestershire sauce
  • 10 carrots
  • 5 potatoes
  • 1 bottle Scotch whiskey
  • salt to taste

Instructions

  1. Trim excess fat from the oxtails and place in a large pot.
  2. Fill with water to cover the oxtails and add all ingredients except potatoes, carrots, and whiskey.
  3. Bring to a boil, then reduce heat and simmer for 1 1/2 hours or more, until peanuts are tender and meat nearly falls off the bone.
  4. Optional: cool and refrigerate overnight before serving.
  5. Add potatoes, carrots, and whiskey as desired before serving.
