Ingredients

  • 1 lb. chicken meat, thin slivers
  • 4 1/2 cups chicken broth
  • 1 can bamboo shoots, slivered
  • 1 small round onion, thin slices
  • 2 tsp. salt
  • 2 tsp. sugar
  • 2 Tbsp. shoyu
  • 6 eggs, beaten
  • 1/4 cup mirin
  • 1/2 cup green onion, minced

Instructions

  1. Drain the can of slivered bamboo shoots.
  2. Place the bamboo shoots in a saucepan and cover with water.
  3. Bring to a boil and drain.
  4. Simmer the chicken in chicken broth for 5 minutes.
  5. Add the drained bamboo shoots, sliced onion, salt, sugar, shoyu, and mirin to the chicken and broth mixture.
  6. Add the minced green onions.
  7. Pour the beaten eggs over the chicken mixture.
  8. Cook over low heat for 30 seconds with the lid on.
  9. Serve the mixture in individual bowls over hot rice.
  10. Garnish with crushed, toasted nori if desired.
