Ingredients

  • 24 oysters in shells
  • 2 Tbsp. snipped parsley
  • 1 Tbsp. chopped onion
  • 1 Tbsp. butter, melted
  • Paprika
  • 1 c. cooked chopped spinach
  • 1 c. shredded Mozzarella cheese
  • 1/4 c. fine dry bread crumbs

Instructions

  1. Preheat oven to 450°.
  2. Open oysters.
  3. With knife, remove oysters from shells; drain oysters.
  4. Wash shells.
  5. Place each oyster in deep half of shell.
  6. Combine parsley, onion, and 1 tablespoon melted butter; spread over oysters.
  7. Sprinkle with a little salt, pepper, and paprika.
  8. Top each with 2 teaspoons spinach, then 1/2 teaspoon bread crumbs.
  9. Dot each with about 1 teaspoon butter, and sprinkle with shredded Mozzarella.
  10. Arrange shells on bed of rock salt in a shallow pan.
  11. Bake till cheese is melted and browned, about 10 minutes.
