Ingredients

  • 5 cups orange juice
  • 2 cups pineapple juice
  • 1/2 cup lemon juice
  • 4 packets Equal
  • 4 cups water
  • 2 large bottles diet ginger ale
  • 1 pound fresh or frozen peeled shrimp
  • 2 tablespoons cornstarch
  • 2 teaspoons instant chicken bouillon granules
  • 1 teaspoon sugar
  • 1/8 teaspoon pepper
  • 1 teaspoon finely shredded lemon peel
  • 3 tablespoons lemon juice
  • nonstick spray coating
  • 1 1/2 cups bias-sliced celery
  • 3/4 cup chopped sweet green or red pepper
  • 2 cups sliced fresh mushrooms
  • 1 (6 oz.) package frozen pea pods, thawed and drained
  • 1 (6 oz.) pkg. frozen pea pods, thawed and drained

Instructions

  1. Thaw the shrimp if frozen.
  2. In a small bowl, mix cornstarch, chicken bouillon granules, sugar, pepper, and water to make a slurry.
  3. Heat nonstick spray in a skillet over medium heat.
  4. Add sliced celery, chopped green or red pepper, and sliced mushrooms; stir-fry until vegetables are tender.
  5. Add shrimp to the skillet and cook until pink and opaque.
  6. Stir in lemon peel and lemon juice; cook for another minute.
  7. In a large pitcher, combine orange juice, pineapple juice, lemon juice, water, and Equal packets.
  8. Pour the punch into glasses or a serving bowl.
  9. Top with diet ginger ale just before serving for a fizzy finish.
