Oyster stuffed mushrooms combine tender caps with savory oyster and cheese filling, topped with melted Cheddar — a sophisticated appetizer perfect for seafood lovers and gatherings.

Ingredients

  • 18 large mushrooms
  • 2 1/2 dozen oysters, chopped
  • 1 clove garlic, crushed
  • 3 green onions, chopped
  • 1/2 cup bread crumbs
  • 2 tablespoons Parmesan or Romano cheese, grated
  • 4 tablespoons butter
  • 1 egg, beaten

Instructions

  1. Cut stems out of mushrooms, leaving a niche for stuffing. Saute mushroom caps in 2 tablespoons butter; set aside.
  2. Saute green onions, garlic, and chopped stems of mushrooms in 2 tablespoons butter.
  3. Add chopped oysters and cook until oysters curl.
  4. Add breadcrumb-Parmesan cheese mixture, then bind with the beaten egg. Stuff mushroom caps with the mixture.
  5. Place a slice of Cheddar cheese on top of each mushroom and put under the broiler for browning.
