Ingredients

  • 2 chicken bouillon cubes
  • 2 cups diced potatoes
  • 1/2 cup sliced carrots
  • 1/2 cup sliced celery
  • 1/4 cup chopped onion
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded mild Cheddar cheese
  • 2 cups diced cooked chicken

Instructions

  1. Dissolve the chicken bouillon cubes in 2 cups of boiling water.
  2. Add diced potatoes, sliced carrots, sliced celery, chopped onion, salt, and ground pepper to the bouillon and simmer, covered, for 10 minutes.
  3. Melt butter in a saucepan over low heat.
  4. Add flour to the melted butter and blend thoroughly to create a roux.
  5. Gradually add milk to the roux, cooking over low heat and stirring constantly until the mixture thickens.
  6. Stir in shredded mild Cheddar cheese until melted and smooth.
  7. Add the cooked diced chicken and the undrained vegetables to the cheese mixture.
  8. Heat the chowder gently without boiling, until thoroughly heated.
  9. Serve hot with rolls or bread on the side.
