Ingredients

  • 1 cup sugar
  • 5 1/4 oz. margarine
  • 1 jigger pisco or cognac
  • 1/2 cup candied fruit
  • rind of 1 orange
  • 1 tablespoon whole anise
  • 4 cups or more flour
  • 3 eggs
  • 1/2 cup seedless raisins
  • 1 tablespoon azahar water or 1 teaspoon orange extract
  • 2 oz. caked yeast

Instructions

  1. Place the yeast in 3/4 cup warm milk; let rest 3 to 4 hours.
  2. Beat the egg whites with the sugar until it forms peaks.
  3. Add the pisco and the orange extract; set aside.
  4. Add the yeast into a large bowl.
  5. Add the rest of the warm milk, the melted butter, the egg yolks, the grated orange rind, and the anise.
  6. Slowly add 3/4 of the flour and the egg white mixture.
  7. Beat until smooth.
  8. Set aside in a warm space until the next day.
