  • 3 lb. chicken, cut up or chicken thighs or breasts
  • 3 Tbsp. butter
  • 1 c. chopped onion
  • 1 c. rice
  • 1/4 c. tomato paste
  • 2 c. water
  • 8 large shrimp or 1/2 lb. shrimp or a can of shrimp
  • 1/4 tsp. garlic powder
  • dash of cayenne
  • 1 lb. can garbanzo beans
  • 1 c. peas (optional)

Instructions

  1. Brown the chicken in butter or oil in a large pot or skillet.
  2. Cook the chicken until almost done, then remove it from the pan and set aside.
  3. Add chopped onion and rice to the pan and cook for 3 to 5 minutes.
  4. Combine tomato paste and water, then add the mixture to the rice along with shrimp, garlic powder, and cayenne pepper.
  5. Stir in garbanzo beans and their liquid, and add peas if desired.
  6. Return the chicken to the pan.
  7. Cover and simmer for 25 minutes until the rice is cooked and flavors meld.
