Parsley Meat Loaf
A flavorful meat loaf infused with fresh parsley, green pepper, and aromatic spices, perfect for family dinners and gatherings, offering a savory, herbaceous taste.
Ingredients
- 2 lb. ground chuck ⓘ
- 1 1/4 cups soft breadcrumbs ⓘ
- 1 cup chopped fresh parsley ⓘ
- 3/4 cup chopped onion ⓘ
- 1 egg, beaten
- 2 Tbsp. chopped green pepper ⓘ
- 1 large clove garlic, minced ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. dried whole thyme ⓘ
- 1/2 tsp. freshly ground pepper ⓘ
- 1/4 tsp. ground allspice ⓘ
- 1/8 tsp. ground nutmeg ⓘ
- 1/8 tsp. red pepper ⓘ
- 3 bay leaves ⓘ
- 1 Tbsp. catsup ⓘ
Instructions
- Combine all ingredients except bay leaves and catsup; stir well.
- Shape into a loaf and place in a 9 x 5 x 3-inch two-piece loaf pan with drain holes in the bottom.
- Arrange bay leaves on top of the loaf.
- Bake at 350°F (175°C) for 1 hour and 20 to 25 minutes or until done.
- Remove from oven, discard bay leaves, and spread catsup over the meat loaf before serving.
