Ingredients

  • 2 lb. ground chuck
  • 1 1/4 cups soft breadcrumbs
  • 1 cup chopped fresh parsley
  • 3/4 cup chopped onion
  • 1 egg, beaten
  • 2 Tbsp. chopped green pepper
  • 1 large clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. freshly ground pepper
  • 1/4 tsp. ground allspice
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. red pepper
  • 3 bay leaves
  • 1 Tbsp. catsup

Instructions

  1. Combine all ingredients except bay leaves and catsup; stir well.
  2. Shape into a loaf and place in a 9 x 5 x 3-inch two-piece loaf pan with drain holes in the bottom.
  3. Arrange bay leaves on top of the loaf.
  4. Bake at 350°F (175°C) for 1 hour and 20 to 25 minutes or until done.
  5. Remove from oven, discard bay leaves, and spread catsup over the meat loaf before serving.
