Ingredients

  • 2 Tbsp. butter or margarine
  • 1 1/2 c. pumpkin
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. mace
  • 1/4 tsp. cloves
  • 2 eggs
  • 2 Tbsp. flour
  • 1/2 c. dark brown sugar
  • 1/2 c. white sugar
  • 1/2 tsp. salt
  • 1 c. milk

Instructions

  1. Line a 9-inch pie pan with pastry and chill in the refrigerator.
  2. Melt butter or margarine.
  3. Add pumpkin and spices to the melted butter.
  4. Beat eggs until frothy.
  5. Mix flour, sugar, salt, and milk together.
  6. Add the mixture to the beaten eggs.
  7. Combine the egg mixture with the pumpkin mixture and stir gently.
  8. Pour the filling into the prepared pie shell.
  9. Bake at 450°F for 15 minutes.
  10. Reduce oven temperature to 375°F and bake for an additional 40 minutes.
  11. Test the pie with a knife to check for doneness.
