Ingredients

  • 3 chopped cantaloupes
  • 3 chopped cucumbers
  • 3 chopped red peppers
  • 3 chopped onions
  • salt
  • 6 c. vinegar
  • 4 c. sugar
  • 1 Tbsp. dry mustard
  • 1 Tbsp. celery seed
  • 1 tsp. turmeric

Instructions

  1. Combine chopped cantaloupe, cucumber, red peppers, and onions in a large bowl; sprinkle with salt.
  2. Cover and let stand at room temperature overnight.
  3. Drain the vegetables; cover with vinegar in a kettle.
  4. Add sugar, dry mustard, and celery seed.
  5. Bring to a boil and cook for 1 hour.
  6. Add turmeric and mix well.
  7. Put the hot relish into sterilized jars and seal.
