Juicy Cornish hens cooked with a rich tomato and wine sauce, seasoned with spices and garlic, perfect for a hearty, flavorful meal for family or gatherings.

Ingredients

  • 2 Cornish hens
  • 1 large onion
  • 2 cloves garlic
  • 1 tsp parsley
  • 1 tsp paprika
  • salt to taste
  • pepper to taste
  • 1 Knorr chicken bouillon
  • 2 cups crushed tomatoes
  • 5 Tbsp olive oil
  • 1 cup red wine
  • 1 cup water

Instructions

  1. Remove skin from the Cornish hens and cut into pieces.
  2. Brown sliced onion and chopped garlic in olive oil.
  3. Add chicken pieces and spices (parsley, paprika, salt, pepper).
  4. Brown the chicken on both sides.
  5. Add crushed tomatoes and cook for 2 to 3 minutes.
  6. Pour in red wine, water, add Knorr chicken bouillon and mustard.
  7. Bring to a boil.
  8. Reduce heat and cook on low for 30 minutes in a covered pot.
  9. Simmer for another 5 minutes and serve with rice.
