Delicious baked burritos filled with beans, cheese, fresh vegetables, and salsa, perfect for a hearty, flavorful meal that suits all taco lovers and casual diners.

Ingredients

  • 1 pkg. burrito shells
  • 1 (15 oz.) can refried beans
  • 1 (8 oz.) jar salsa
  • 1 green onion
  • 1 (15 oz.) can black olives
  • 2 tomatoes
  • fresh cilantro
  • 1 avocado
  • 4 leaves romaine lettuce
  • 4 oz. sour cream
  • 1 (8 oz.) pkg. shredded cheese

Instructions

  1. Lay out approximately 8 burrito shells on a baking sheet.
  2. Layer each shell with refried beans, salsa, chopped green onion, sliced black olives, diced tomatoes, chopped avocado, chopped cilantro (optional), romaine lettuce leaves, sour cream, and shredded cheese.
  3. Fold the shells over the fillings to enclose the ingredients.
  4. Place the filled burritos on a cookie sheet and bake at 350°F for approximately 20 minutes or until the cheese is melted and bubbly.
