Ingredients

  • 1 cup flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup margarine
  • 1/2 cup chopped walnuts
  • 3 tablespoons cornstarch
  • 1/2 teaspoon ground ginger
  • 1/2 cup light corn syrup
  • 4 1/2 cups peeled, sliced peaches or nectarines
  • 1 unbaked (9-inch) pastry shell

Instructions

  1. In a bowl, stir together flour and brown sugar.
  2. Cut in margarine with a pastry blender or two knives until crumbs form.
  3. Stir in chopped walnuts.
  4. Set aside the crumb mixture.
  5. In a medium bowl, mix cornstarch and ground ginger.
  6. Stir in light corn syrup until smooth.
  7. Add peeled, sliced peaches to the syrup mixture.
  8. Toss to coat the peaches evenly.
  9. Spoon the peach mixture into the unbaked pastry shell.
  10. Sprinkle the crumb mixture on top of the peaches.
  11. Bake at 375°F for 55 minutes or until golden brown.
