Peanut Chunkies are rich, crunchy cookies packed with chopped peanuts and a delightful peanut butter flavor, perfect for peanut lovers and a satisfying snack or dessert.

Ingredients

  • 1 1/3 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter or margarine
  • 2/3 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 cup peanuts, finely chopped

Instructions

  1. Mix dry ingredients together in a bowl.
  2. Beat butter, egg, granulated sugar, brown sugar, and peanut butter until light and fluffy.
  3. Combine the dry ingredients with the wet mixture until well mixed.
  4. Pinch off pieces of dough and roll between palms into cylinders.
  5. Roll the cylinders in chopped peanuts.
  6. Place the cylinders on a lightly greased cookie sheet, 2 inches apart.
  7. Bake at 375°F (190°C) for 10 minutes.
