Ingredients

  • 1 cup sugar
  • 2 tablespoons butter
  • 1 egg
  • 3/4 cup milk
  • 2 to 3 teaspoons baking powder
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla

Instructions

  1. Mix sugar, melted butter, egg, milk, baking powder, flour, salt, and vanilla until well combined.
  2. Pour the batter into muffin tins and bake in a moderate oven until golden and a toothpick inserted in the center comes out clean.
  3. Allow muffins to cool completely.
  4. Dip the cooled muffins in a thin icing made with confectioners' sugar and milk.
  5. Then dip the icing-coated muffins in ground peanuts.
