Peanut Zucchini Bread
Ingredients
- 1 1/2 c. peanuts, unsalted ⓘ
- 1 c. zucchini, grated fine ⓘ
- 1 can (8 oz.) crushed pineapple ⓘ
- 1/2 c. dried chopped prunes ⓘ
- 3 eggs ⓘ
- 1/2 c. honey ⓘ
- 2 tsp. vanilla ⓘ
- 1 c. peanut oil ⓘ
- 3 c. all-purpose flour ⓘ
- 2 c. sugar ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. soda ⓘ
- 3 tsp. baking powder ⓘ
- 3 tsp. cinnamon ⓘ
- 1 tsp. cloves ⓘ
Instructions
- Scald
- peanuts in
- boiling water until skins are soft. Grind peanuts up fine.
- Mix zucchini and peanuts, then add all other ingredients,
- mixing
- well.
- Bake in 2 loaf pans at 350° for 45 to 50 minutes.
