Peanut Zucchini Bread

Ingredients

  • 1 1/2 c. peanuts, unsalted
  • 1 c. zucchini, grated fine
  • 1 can (8 oz.) crushed pineapple
  • 1/2 c. dried chopped prunes
  • 3 eggs
  • 1/2 c. honey
  • 2 tsp. vanilla
  • 1 c. peanut oil
  • 3 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 tsp. cloves

Instructions

  1. Scald
  2. peanuts in
  3. boiling water until skins are soft. Grind peanuts up fine.
  4. Mix zucchini and peanuts, then add all other ingredients,
  5. mixing
  6. well.
  7. Bake in 2 loaf pans at 350° for 45 to 50 minutes.
