Ingredients

  • 1 (8.5 oz.) can pear slices, drained
  • 1/4 cup sugar
  • 1/3 cup oil
  • 1/4 cup vinegar
  • 1 3/4 cups flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 cup shredded Cheddar
  • 1 beaten egg

Instructions

  1. Drain pear slices, reserving 1/2 cup syrup, then chop the pears.
  2. In a bowl, combine chopped pears and reserved syrup with the beaten egg and oil.
  3. In a large mixing bowl, stir together the flour, sugar, baking powder, and salt.
  4. Stir in the shredded Cheddar and chopped walnuts.
  5. Make a well in the center of the flour mixture and add the pear mixture all at once.
  6. Stir until the mixture is just moistened; batter will be lumpy.
  7. Pour the batter into a greased loaf pan and bake at 350°F (175°C) for about 45 minutes, or until a toothpick inserted in the center comes out clean.
