Pecan Bread Pudding

Ingredients

  • 1 egg white
  • 5 to 6 Tbsp. liquid egg substitute
  • 3/4 cup undiluted evaporated skimmed milk
  • 3/4 cup fresh nonfat milk
  • 4 cups stale French bread cubes
  • 1/3 cup chopped pecans toasted
  • 1/3 cup granulated sugar
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg

Instructions

  1. Put egg white in a glass measuring cup.
  2. Add enough liquid egg substitute to make 1/2 cup and beat with a wire whisk until well blended.
  3. In a large bowl, combine undiluted evaporated skimmed milk, nonfat milk, bread cubes, and toasted pecans.
  4. Stir until all liquid is absorbed.
  5. In a medium bowl, combine the egg mixture, sugar, vanilla extract, cinnamon, and nutmeg.
  6. Stir the mixture into the bread mixture.
  7. Spray a 1-quart casserole with nonstick spray.
  8. Pour the bread mixture into the casserole.
  9. Place the casserole inside a larger one and fill the outer casserole with hot water to half of the inner casserole's depth.
  10. Bake in a preheated 350°F oven for 50 minutes or until golden brown and set.
  11. Serve with warm rum custard sauce.
