Ingredients

  • 4 c. all-purpose flour
  • 1 Tbsp. baking soda
  • 1/4 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 1/2 Tbsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 5 eggs
  • 2 c. sugar
  • 1 c. firmly packed brown sugar
  • 1 1/2 c. vegetable oil
  • 1 Tbsp. vanilla extract
  • 2 c. shredded zucchini
  • 1 c. shredded apple
  • 1 1/2 c. chopped pecans

Instructions

  1. Combine the first six dry ingredients: flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg; set aside.
  2. In a large bowl, beat eggs, sugar, brown sugar, vegetable oil, and vanilla extract at medium speed until well blended.
  3. Stir in shredded zucchini, shredded apple, and chopped pecans.
  4. Add the dry ingredients to the wet mixture, stirring just until moistened.
  5. Spoon the batter into three greased and floured 8 1/4 x 4 1/2 x 3-inch loaf pans.
  6. Bake at 350°F (175°C) for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean.
  7. Cool in pans for 10 minutes, then remove to a wire rack and cool completely.
