Ingredients

  • 3 cups pecan meal
  • 6 eggs
  • 1 1/2 cups sugar
  • 2 1/2 tablespoons plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 pint whipping cream

Instructions

  1. Beat egg whites until stiff; gradually add 1/4 cup sugar while beating.
  2. In a separate bowl, beat egg yolks with 1 1/4 cups sugar for 5 minutes at medium speed.
  3. Sift together flour, baking powder, and salt; add to egg yolk mixture and mix well.
  4. Stir in vanilla and 2 1/2 cups pecan meal.
  5. Gently fold in the beaten egg whites into the batter.
  6. Divide the batter into two 9-inch layer pans and bake at 350°F for 20 to 25 minutes.
  7. Allow layers to cool thoroughly.
  8. Frost with whipped cream flavored with wine.
  9. Sprinkle additional pecan meal on top of the whipped cream.
