Pecan Roast

Ingredients
- 1/2 cup celery, chopped ⓘ
- 1/2 cup onions, chopped ⓘ
- 1/4 cup green peppers, chopped ⓘ
- 2 cups Special K cereal, crushed ⓘ
- 3/4 cup pecan meal ⓘ
- 1 cup bread or cracker crumbs ⓘ
- 2 packages light George Washington broth
- 1/3 cup mayonnaise ⓘ
- 1 cup low-fat cottage cheese ⓘ
- 3 eggs, beaten ⓘ
- onion salt
- 2 tablespoons soy sauce
Instructions
- Cook celery, onion, and green peppers in 2/3 cup water for 10 minutes.
- Mix all ingredients together in a large mixing bowl.
- Pour mixture into a well-oiled loaf pan.
- Bake at 375°F until nicely browned, about 1 hour.
