Ingredients

  • 1/2 cup celery, chopped
  • 1/2 cup onions, chopped
  • 1/4 cup green peppers, chopped
  • 2 cups Special K cereal, crushed
  • 3/4 cup pecan meal
  • 1 cup bread or cracker crumbs
  • 2 packages light George Washington broth
  • 1/3 cup mayonnaise
  • 1 cup low-fat cottage cheese
  • 3 eggs, beaten
  • onion salt
  • 2 tablespoons soy sauce

Instructions

  1. Cook celery, onion, and green peppers in 2/3 cup water for 10 minutes.
  2. Mix all ingredients together in a large mixing bowl.
  3. Pour mixture into a well-oiled loaf pan.
  4. Bake at 375°F until nicely browned, about 1 hour.
