Pecan Squash

Ingredients

  • 1 lb. acorn squash
  • 4 Tbsp. pecans, chopped
  • 1 1/2 Tbsp. brown Sugar Twin
  • 4 graham crackers, crushed
  • 4 Tbsp. diet margarine, softened
  • 1/8 tsp. nutmeg

Instructions

  1. Pierce the acorn squash in several places to allow steam to escape.
  2. Place the squash in the microwave oven and microwave on High for 6 minutes.
  3. Cut the squash crosswise into halves and remove the seeds.
  4. Arrange the halves, cut side down, on a microwavable serving plate.
  5. Cover tightly and microwave for 7 to 9 minutes or until tender.
  6. Remove stems and cut a thin slice from the pointed ends to prevent tipping.
