Ingredients

  • 1/4 lb. margarine
  • 1 (3 oz.) pkg. cream cheese
  • 1 c. flour
  • 1 c. chopped pecans
  • dash of salt
  • 2 eggs
  • 2 Tbsp. melted butter
  • 1 1/2 c. brown sugar
  • 1/2 tsp. vanilla

Instructions

  1. Combine margarine, cream cheese, and flour and mix until the mixture resembles pie dough.
  2. Divide the dough into 36 small balls.
  3. Press each ball into the bottom and sides of bite-size cupcake pans to form crusts.
  4. Sprinkle half of the chopped pecans over the crusts.
  5. In a separate bowl, mix brown sugar, eggs, melted butter, vanilla, and a dash of salt to make the filling.
  6. Pour the filling over the pecan-topped crusts.
  7. Bake at 350°F (175°C) until the filling is set and golden, approximately 20-25 minutes.
