Ingredients

  • 4 cups cornmeal
  • 2 tins cream-style corn
  • 4 large eggs
  • 1 1/2 tins evaporated milk
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1/2 pound butter
  • 1 pound grated cheese
  • onions

Instructions

  1. Mix dry ingredients together in a large bowl: cornmeal, baking soda, sugar, and salt.
  2. Make a well in the center and pour in cream-style corn, evaporated milk, and eggs. Mix until well combined.
  3. Pour half of the batter into a greased 9 x 12-inch baking dish.
  4. Sprinkle a layer of grated cheese over the batter.
  5. Scatter chopped onions, chives, and sweet peppers over the cheese.
  6. Pour the remaining batter over the vegetables.
  7. Repeat the cheese and vegetable layers on top.
  8. Bake at 350°F until the bread is golden and set, about 40 minutes.
