- Add egg and vanilla, beating well.
- Combine flour and salt; add to butter mixture. Stir in oats and crushed peppermint candy.
- Cover and chill the dough for 1 hour.
- Divide the dough in half.
- Roll each portion to 1/8-inch thickness on a surface dusted with powdered sugar.
- Cut with a 2 1/2-inch cookie cutter and place on a greased, foil-lined cookie sheet.
- Bake at 350°F for 8 minutes; remove to wire racks to cool.
