Ingredients

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup uncooked oats
  • 1/3 cup crushed hard peppermint candy
  • powdered sugar
  • frosting

Instructions

  1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well.
  2. Add egg and vanilla, beating well.
  3. Combine flour and salt; add to butter mixture. Stir in oats and crushed peppermint candy.
  4. Cover and chill the dough for 1 hour.
  5. Divide the dough in half.
  6. Roll each portion to 1/8-inch thickness on a surface dusted with powdered sugar.
  7. Cut with a 2 1/2-inch cookie cutter and place on a greased, foil-lined cookie sheet.
  8. Bake at 350°F for 8 minutes; remove to wire racks to cool.
