Ingredients

  • 1/2 cup buttermilk
  • 1 cup mashed potatoes
  • 1 teaspoon vanilla
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 2 egg whites
  • 2/3 cup shortening
  • 2 cups sugar
  • 4 egg yolks
  • 2 squares melted chocolate
  • 1/2 teaspoon salt
  • 1 cup walnuts

Instructions

  1. Preheat oven and melt the chocolate squares using the oven or microwave.
  2. In a mixing bowl, combine the mashed potatoes, buttermilk, and vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Cream the shortening and sugar until light and fluffy.
  5. Add the well-beaten egg yolks to the creamed mixture and blend well.
  6. Gradually mix in the melted chocolate.
  7. Fold in the mashed potato mixture and beaten egg whites until just combined.
  8. Stir in the walnuts gently.
  9. Pour the batter into a greased baking pan.
  10. Bake in the preheated oven for approximately 30 minutes or until a toothpick inserted into the center comes out clean.
