Ingredients

  • 6 Tbsp. butter or margarine
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. soda
  • 1 c. persimmon pulp
  • 2 c. sifted all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cloves
  • 2 tsp. grated orange peel
  • 1 c. chopped dates

Instructions

  1. Cream the butter until smooth.
  2. Add sugar and beat well until combined.
  3. Add eggs, one at a time, beating after each addition.
  4. Dissolve the baking soda in the persimmon pulp.
  5. Mix the persimmon mixture into the creamed ingredients.
  6. Combine the sifted flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  7. Stir the dry ingredients into the creamed mixture until just combined.
