Ingredients

  • 1 quart strained persimmons
  • 2 cups brown sugar
  • 1 cup white sugar
  • 1 1/2 cups buttermilk
  • 1 cup sweet milk
  • 3 eggs
  • 1/2 cup butter
  • 2 cups flour
  • 1 large sweet potato
  • 1 teaspoon soda

Instructions

  1. Stir the baking soda into the buttermilk and set aside.
  2. Mix all remaining ingredients together in a large bowl.
  3. Add the buttermilk with soda to the mixture and combine thoroughly.
  4. Pour the batter into a greased baking dish.
  5. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted in the center comes out clean.
