Ingredients

  • 1 pizza shell
  • ½ cup pesto sauce
  • 1 cup grated mozzarella cheese
  • 200g tofu
  • 1 onion
  • 1 cup sliced mushrooms
  • 2 tablespoons sesame seeds
  • 2 tablespoons olive oil
  • ½ cup artichoke hearts
  • ¼ cup pine nuts
  • 1 cup fresh spinach
  • 2 tomatoes
  • ½ cup pineapple (optional)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Spread pesto sauce over the pizza shell.
  2. Top with grated mozzarella cheese.
  3. Sauté cubed tofu, sliced onions, sliced mushrooms, and about 2 tablespoons sesame seeds in olive oil.
  4. Add the sautéed mixture on top of the pesto-covered pizza.
  5. Add chopped artichoke hearts, torn spinach, pine nuts, pineapple (optional), and sliced tomatoes.
  6. Top with grated Parmesan cheese and crumbled feta cheese.
  7. Bake at 425°F (220°C) for 15 to 20 minutes until golden and bubbling.
