Ingredients

  • 8 c. green tomatoes or squash, thinly sliced
  • 2 c. onions, thinly sliced
  • 1 Tbsp. salt
  • 1/2 c. green peppers, diced
  • 1 c. apple cider vinegar
  • 1 3/4 c. sugar
  • 1/2 tsp. celery seed
  • 1/2 tsp. mustard seed

Instructions

  1. Combine green tomatoes, onions, and salt in a large bowl.
  2. Let stand for 1 hour.
  3. Combine green pepper, vinegar, sugar, celery seed, and mustard seed in a large pan and bring to a boil.
  4. Add tomatoes and onions and bring to a boil again.
  5. Pack pickles into hot jars; cover with boiling vinegar mixture.
  6. Place hot lids on jars immediately.
