Ingredients

  • 1 unbaked refrigerated pastry shell
  • 3 slices bacon
  • chunks of Swiss cheese
  • 1 3/4 cups cottage cheese
  • 3 beaten eggs
  • 1/4 teaspoon pepper
  • 10 ounces frozen chopped spinach, thawed
  • 1 medium onion, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt

Instructions

  1. Prick the bottom and sides of the pastry shell with a fork.
  2. Bake the pastry in a 400°F oven for 3 minutes.
  3. Prick again where necessary to prevent bubbling.
  4. Bake for an additional 5 minutes. Cool completely.
  5. Drain the thawed frozen chopped spinach well and set aside.
  6. Cook the bacon in a large skillet until crisp.
  7. Remove the bacon and reserve, leaving 1 tablespoon of drippings in the skillet.
  8. Chop the cooked bacon and set aside.
  9. In a bowl, combine cottage cheese, beaten eggs, pepper, salt, grated Parmesan cheese, chopped onion, cooked bacon, and drained spinach.
  10. Pour the mixture into the cooled pastry shell.
  11. Bake at 375°F for about 30-35 minutes until set and golden.
