Ingredients

  • 2 Tbsp. peanut oil
  • 1 lb. boneless pork
  • 1 green pepper
  • 1 c. drained pineapple chunks
  • 1 c. sliced celery
  • 2 Tbsp. catsup
  • 1 (10 1/2 oz.) can condensed chicken broth
  • 1/2 c. white vinegar
  • 1/3 c. sugar
  • 2 Tbsp. cornstarch

Instructions

  1. In a large skillet, heat peanut oil until it starts to smoke.
  2. Add pork, cut into 1/8-inch strips, and stir quickly over high heat until cooked, about 4 minutes.
  3. Add green pepper, drained pineapple chunks, sliced celery, catsup, condensed chicken broth, white vinegar, and sugar.
  4. Cover and cook until vegetables are tender but crisp, about 6 minutes.
  5. In a small bowl, mix cornstarch with 1/4 cup water.
  6. Stir the cornstarch mixture into the skillet quickly and cook, stirring, until the mixture bubbles and thickens.
  7. Season to taste with salt and serve hot with rice.
