Ingredients

  • 1 cup crushed pineapple
  • 1 cup biscuit mix
  • 1 cup milk
  • 4 eggs
  • 6 tablespoons butter
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg
  • 4 ounces diced cooked ham
  • 1 cup Monterey Jack cheese

Instructions

  1. Preheat oven to 350°F.
  2. Drain the pineapple and reserve 2 tablespoons of juice and pineapple for garnish.
  3. Combine biscuit mix, milk, eggs, melted butter, Dijon mustard, onion powder, and nutmeg in a blender or large mixing bowl until smooth.
  4. Stir in diced cooked ham, shredded Monterey Jack cheese, chopped onions, and pineapple.
  5. Pour the mixture into a greased 9-inch pie plate.
  6. Bake for 35 to 40 minutes or until set.
  7. Garnish with reserved pineapple and juice before serving.
