Ingredients

  • 1/4 cup butter
  • 1 egg
  • 8 1/2 oz. can crushed pineapple
  • 2 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1/2 cup chopped dates
  • 1/4 cup diced maraschino cherries
  • 1/2 cup sugar
  • 1/4 teaspoon lemon extract
  • 1/4 cup nuts
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup water

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add egg and lemon extract, mixing well.
  3. Drain crushed pineapple, reserving the juice.
  4. Stir in crushed pineapple and chopped nuts into the mixture.
  5. In a separate bowl, combine flour, baking soda, baking powder, and salt.
  6. Add dry ingredients to the creamed mixture alternately with reserved pineapple juice and water, mixing gently.
  7. Fold in drained maraschino cherries.
  8. Pour batter into a greased loaf pan.
  9. Bake at 375°F (190°C) for 55 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before removing from pan and slicing.
