Ingredients

  • 3/4 cup soy sauce
  • 1/4 cup dry sherry
  • 1 tablespoon minced peeled ginger root
  • 2 green onions, diced
  • 1 garlic clove, crushed
  • 4 pounds pork spareribs
  • 2 (14 to 20 oz.) cans pineapple chunks in juice
  • 1/2 cup packed brown sugar

Instructions

  1. In a large open roasting pan, mix soy sauce, dry sherry, minced ginger, diced green onions, and crushed garlic.
  2. Place the spareribs in the soy sauce mixture, turning to coat well, then arrange meat side down in the pan.
  3. Bake in a 325°F (163°C) oven for one hour.
  4. Occasionally baste the ribs with the soy sauce mixture using a pastry brush.
  5. Turn the ribs meat side up and bake for an additional 20 minutes.
  6. Drain 1/4 cup pineapple chunks into a 1-cup measure and stir in brown sugar.
  7. Brush the spareribs with the brown sugar mixture.
  8. Bake for 10 minutes longer or until the ribs are fork-tender.
  9. Spoon drained pineapple chunks over the spareribs.
  10. Bake for 5 minutes or just until the pineapple is heated through.
  11. Arrange the spareribs on a warm large platter with the pineapple.
