Ingredients

  • 2 1/2 cups sifted self-rising flour
  • 2 cups sugar
  • 1 1/2 cups Crisco oil
  • 4 egg yolks
  • 1 small (8 1/2 oz.) can crushed pineapple and juice
  • 2 Tbsp hot water
  • 2 tsp cinnamon
  • 1 tsp butter extract
  • 1 tsp coconut extract
  • 1 tsp vanilla extract
  • 1 cup chopped nuts
  • 4 egg whites
  • 1 1/2 tsp. nutmeg

Instructions

  1. Combine all ingredients except nuts and egg whites in a mixing bowl.
  2. Beat well until smooth, then fold in chopped nuts.
  3. Gently fold in beaten egg whites until fully incorporated.
  4. Pour the batter into a greased and floured tube pan.
  5. Place the pan in a cold oven, then set the oven to 325°F (160°C).
  6. Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool for 15 minutes before removing from the pan.
