Pineapple Nut Spice Cake

Ingredients
- 2 1/2 cups sifted self-rising flour ⓘ
- 2 cups sugar
- 1 1/2 cups Crisco oil ⓘ
- 4 egg yolks ⓘ
- 1 small (8 1/2 oz.) can crushed pineapple and juice ⓘ
- 2 Tbsp hot water ⓘ
- 2 tsp cinnamon ⓘ
- 1 tsp butter extract ⓘ
- 1 tsp coconut extract ⓘ
- 1 tsp vanilla extract
- 1 cup chopped nuts ⓘ
- 4 egg whites ⓘ
- 1 1/2 tsp. nutmeg ⓘ
Instructions
- Combine all ingredients except nuts and egg whites in a mixing bowl.
- Beat well until smooth, then fold in chopped nuts.
- Gently fold in beaten egg whites until fully incorporated.
- Pour the batter into a greased and floured tube pan.
- Place the pan in a cold oven, then set the oven to 325°F (160°C).
- Bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool for 15 minutes before removing from the pan.
