Pineapple Oatmeal Bread

Ingredients
- 3/4 cup sugar ⓘ
- 1/3 cup oleo, melted
- 2 eggs ⓘ
- 1 (8 oz.) can crushed pineapple (undrained) ⓘ
- 1 3/4 cups flour ⓘ
- 1/2 cup golden raisins (optional) ⓘ
- 2 1/2 teaspoons baking powder ⓘ
- 1 teaspoon vanilla ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon baking soda ⓘ
- 1 cup quick cooking or regular oats ⓘ
- 1/2 cup chopped pecans ⓘ
Instructions
- Grease the bottom only of a loaf pan.
- Mix sugar, melted oleo, eggs, and crushed pineapple in a large bowl.
- Stir in the remaining ingredients except oats and nuts.
- Stir in oats and chopped pecans.
- Pour the batter into the prepared loaf pan.
- Bake at 350°F for 55 to 60 minutes.
- Cool for 10 minutes before removing from the pan.
- Loosen sides of the loaf from the pan, then remove and cool completely before slicing.
- Store the bread tightly wrapped in the fridge.
