Ingredients

  • 3/4 cup sugar
  • 1/3 cup oleo, melted
  • 2 eggs
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 3/4 cups flour
  • 1/2 cup golden raisins (optional)
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup quick cooking or regular oats
  • 1/2 cup chopped pecans

Instructions

  1. Grease the bottom only of a loaf pan.
  2. Mix sugar, melted oleo, eggs, and crushed pineapple in a large bowl.
  3. Stir in the remaining ingredients except oats and nuts.
  4. Stir in oats and chopped pecans.
  5. Pour the batter into the prepared loaf pan.
  6. Bake at 350°F for 55 to 60 minutes.
  7. Cool for 10 minutes before removing from the pan.
  8. Loosen sides of the loaf from the pan, then remove and cool completely before slicing.
  9. Store the bread tightly wrapped in the fridge.
