Ingredients

  • 1 cup brown sugar
  • 1 cup margarine
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup crushed pineapple with juice
  • 1/2 cup raisins
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Cream together the brown sugar and margarine.
  2. Add the egg and vanilla, then stir in the crushed pineapple with juice.
  3. Sift together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, beating until smooth.
  5. Stir in the raisins.
  6. Drop by teaspoonfuls onto a cookie sheet.
  7. Bake at 375°F for 12 to 15 minutes, or until golden brown.
  8. Cool on a rack before serving.
